Boozy Banana & Coconut Bread

In the middle of cleaning out the freezer this morning, I noticed we had about 3 bags of frozen bananas that needed to be used. I decided to put together a recipe for a couple of loaves of Boozy Banana & Coconut Bread. Wow it turned out so delicious! I sent a slice with my momma when she went to pick up my little sister, and 10 min later, I received a phone call from her that she had already finished it and would like another slice to be ready for her when she arrived back home! Also so yummy with my afternoon cup of coffee!
INGREDIENTS

- 2 cups flour

- 1 t. baking soda

- 1 t. cinnamon powder

- 1/4 t. salt

- 1/2 cup butter

- 3/4 cup light brown sugar

- 2 eggs

- 3 T. dark rum

- 1 t. vanilla
-
- 2 1/2 cups banana – overripe and mashed

- 3/4 cup shredded coconut- sweetened
- 1/2 cup pecans
INSTRUCTIONS
Preheat oven to 350 degrees F. Lightly grease a 9×5 in pan
In a medium bowl, combine the flour baking soda, cinnamon and salt. Set aside.
In a large bowl, cream the butter and brown sugar. Add the eggs, rum, vanilla, bananas, and mix in.
With a spatula, stir in the dry goods until combined. Fold in the coconut and pecans.
Put batter into the pan. Bake for 65-70min or until toothpick comes out clean.
